How to make:

How to make:

3. Eggplant tofu fried rice

Materials needed:

  • 3 tablespoons of virgin olive oil
  • 2 eggplants, cut into flat rounds
  • 1 carrot, cut into small cubes
  • 100 gr white cabbage, cut into pieces, remove the big stalks
  • 1 tofu, cut into small cubes
  • 1 tempeh, chopped

Softened seasoning:

  • 2 cloves of garlic
  • 5 red onions
  • 1 and a half teaspoons of salt
  • 1 teaspoon sugar

How to make:

These ingredients are basically cooking leftovers that you can manipulate for healthy fried rice variations. Heat 3 tablespoons of olive oil, saute briefly the cabbage and eggplant until lightly browned. Remove and set aside.

How to make:

Heat a frying pan over low heat, then put 1 tablespoon of cooking oil in the skillet on fire. When the oil is hot, add the onion slices, saute until fragrant and cook until golden brown. Remove, set aside. Let the skillet cool.

Mix eggs with ½ teaspoon soy sauce and ½ teaspoon sesame oil, then set aside. Add half a tablespoon of oil to the pan, making sure the surface of the pan is evenly coated with the oil. Put the egg mixture evenly in the pan until the eggs are cooked. When the eggs rise, turn the eggs over and cook the other side for a bit. Remove from the pan, and cut into small, round, thin eggs

  • 2 teaspoons fresh grated ginger
  • ½ teaspoon paprika powder
  • 2 chicken breast fillets, season briefly with salt and pepper, oyster sauce and lime juice. Bake briefly until ¾ cooked.
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tbsp rice vinegar
  • 1 teaspoon cornstarch
  • Pinch of salt

How to make:

Heat the oil in a frying pan over medium heat. Add the onions and saute until fragrant for about 5 minutes. Add ¼ of chicken stock, cover the pan and let it cook for 3 minutes. Remove the broccoli stir fry, set aside.

Return the skillet to medium heat. Add the rice and cook for 5 minutes, stirring occasionally. Add the garlic, ginger, paprika powder and chicken slices. Stir well.
